Zephyr Cake “Snow Rose”

Ingredients

  • 500 ml double cream
  • 400 g “Laima” white zephyr (strawberry or vanilla flavoured)
  • 100 g crushed nuts
  • 400 g cottage cheese
  • 100-150 g marmalade (“Vijolīte” or “Gundega”)
  • 50 g melted chocolate

Cooking guide (40 min.)

Slice the zephyr. Whip double cream, add cottage cheese. Whip until a homogeneous paste is obtained. Arrange slices of marshmallow and cover with the paste, arrange another layer. Make the top layer from the round marshmallow “caps”. Leave in fridge for 2-3 hours. Decorate with slices of marmalade and nuts, pour over melted chocolate. To enrich the taste, add preserved fruits, candied fruits or grated biscuits to the cottage cheese paste.
